Traditional Japanese diets using midwestern feedstuffs are meticulously fed
to all Yamamoto's cattle for 500 plus days. This factor, coupled with the
inherent marbling characteristics of Wagyu cattle, enables Yamamoto to produce
the same carcass attributes as the high quality Kobe beef in Japan.
An important issue about Wagyu beef is
the health aspect. Tests done at Washington State University indicate that
the fat from the Wagyu breed has a healthier fatty acid profile than domestic US
cattle, making it a healthier, lower cholesterol beef to consume.
